Investing in wooden cutting boards, especially end-grain ones, can be a smart choice. For starters, end-grain boards possess a self-healing quality as a result of the way the wood is cut. When a knife slices across the surface of an end-grain board, the upward-pointing wood fibers allow the blade to glide between them rather than cutting through. When the knife is lifted, the fibers naturally move back together, effectively "healing" the surface. This means that the board experiences less wear and tear over time, and your knife retains its sharpness for longer.
